Melon soup with basil

Cool refreshing summer soup.
1. Cut the melons in half and peel the seeds. Using a round spoon, cut 24 balls out of a melon and set aside for decoration. Put the remaining pulp in a blender or food processor.
2. Combine sugar, water and lime zest in a saucepan. Stir gently until sugar dissolves, then boil for 2-3 minutes. Remove from heat and allow to cool slightly. Pour half of the syrup in the combine to the melon and make a smooth mash, adding the remaining syrup and lime juice to taste.
3. Pour the mixture into a bowl, add basil and cool. Serve garnished with basil leaves and melon balls.
On a note:
Add sugar syrup in 2 stages, as the amount of sugar depends on the sweetness of the melon.
