Pancake Vegetable Pie
You will need
- - 500 g champignon mushrooms;
- - 3 pcs. beets;
- - 5 pieces. carrots;
- - 4 things. chicken eggs;
- - 400 g sour cream;
- - 100 g butter;
- - 1 PC. bulb;
- - 300 g flour;
- - 400 g of hard cheese;
- - salt to taste.
Take the mushrooms and soak in warm water for two to three hours. Then remove, rinse thoroughly, clean, remove all films and dirt. Let the mushrooms dry a little. Then cut them into small pieces.
Wash the bulb well, pat dry and cut into half rings. Heat the pan, melt the butter on it and fry the onion. Add the mushrooms to the onions and, stirring, fry for ten to fifteen minutes. Remove from heat and allow to cool completely.
Beat two eggs in a blender, add some salt and add cool mushrooms to them, beat until mixture becomes homogeneous. Add some flour. You should make the dough like liquid pancake. In a pan with a thick bottom, bake some thick pancakes from dough.
Beets and carrots, wash well, cut the tops with leaves and tips with roots.Cook in salted water. Allow to cool and clean. Scrub vegetables with fine grater in different cups.
Beat the remaining eggs, add flour and salt, a little water. It should make a batter. Divide the dough into two equal parts.
