A potato stew is a very light vegetable soup that is ideal for those who keep a fast food menu or those who watch their figure. The dish turns out very nourishing and tasty.

Cooking method:

Peel the onions, cut into cubes and place in a thick-walled saucepan heated with butter. First add coarsely chopped garlic, then cut parsnips with carrots into cubes and put them in a saucepan. Lastly add peeled and diced potatoes and spices. Fry the vegetables for 10–15 minutes, then pour 1.2 l of boiling water, salt and cook on a quiet fire until the potatoes begin to boil soft.

When serving sprinkle with chopped green onions.

By the way, for piquancy, at the end of cooking, you can add a chopped small pickled tomato or a spoonful of tomato paste to the broth.
