What dishes can be cooked with chicken liver

You will need
  • For pate:
  • - 400 g of chicken liver;
  • - 1 onion;
  • - 200 ml of 20% cream;
  • - 100 ml of sherry or brandy;
  • - 100 g butter;
  • - 1.5 tbsp. vegetable oil;
  • - 1 tsp. dried thyme;
  • - 1/3 tsp. ground allspice;
  • - salt;
  • For cupcakes:
  • - 500 g of chicken liver;
  • - 3 chicken eggs;
  • - 80 g sour cream;
  • - 180 g of flour;
  • - 3/4 tsp salts;
  • Filling:
  • - 100 grams of rice;
  • - 2 chicken eggs;
  • - 1 carrot;
  • - 1 onion;
  • - 100 grams of cheese;
  • - vegetable oil;
  • - salt;
  • For pies:
  • - 300 g of chicken liver;
  • - 400 g puff pastry;
  • - 1 onion;
  • - 1 small carrot;
  • - 1 chicken egg;
  • - 1/3 tsp ground paprika and black pepper;
  • - salt;
  • - vegetable oil.
Instruction
Chicken liver pate
Remove the butter from the fridge so that it softens. Peel the bulb and cut into half rings. Rinse the chicken liver and cut off the hard streaks. Fry onions in vegetable oil until transparent over medium heat, add liver to it and cook for a few minutes until it turns gray-brown.
Reduce the cooking temperature to a minimum, pour cream and alcohol into the pan, put seasonings and salt to taste. Cover the dish with a lid and simmer its contents for 15-20 minutes. Cool the liver fry and beat well with a blender with butter pieces until smooth. Soak the pate in the refrigerator for several hours, preferably in a glass container.
Chicken Liver Cupcakes
Boil rice in salted water and hard boiled eggs. Cool everything, chop the second with a knife and mix both products in one dish. Grate the carrot on a coarse grater, remove the husk from the onion and thinly chop it. Fry vegetables in vegetable oil until soft, let cool for a while, shift to rice mass, salt and mix thoroughly.
Prepare a chicken liver and pass it through the meat grinder. Knead the resulting mashed potatoes with eggs, sour cream, flour and salt. Take the cupcake form. Pour the "dough" into the cells for about a third of their capacity, then carefully lay out the stuffing in the middle of the products, add the liver mass to the top. Sprinkle with grated cheese and bake it for 20-25 minutes at 180oC.
Puff pastry with chicken liver
Remove the dough from the freezer. Wash the liver and cut into pieces. Crush onions and carrots and fry for 5-7 minutes in a small amount of vegetable oil with the liver over medium heat. Crank everything in a meat grinder or blender, salt and pepper.
Roll out the dough, trying to maintain the correct shape of the layer. Cut it into 12 identical rectangles. Spread the stuffing on them, fold the edges and pinch them with your fingers.
